Please arrive approximately 5 minutes before the agreed starting time.
👨🌾 A truly private experience
The visit is reserved exclusively for the guests included in your reservation.
No additional guests will be added, and the experience will not be shared with other groups.
A guide and cheesemaker will be dedicated to your group, allowing you to enjoy the visit at a more relaxed pace, ask questions, and explore the topics that interest you most.
⏰ Starting time and duration
The starting time can be arranged approximately between 9:00 AM and 12:30 PM, subject to availability and the daily organization of the Masseria.
The requested starting time must be confirmed before the visit.
The experience lasts approximately 2 hours, although the pace may be adjusted slightly according to the needs of the group and the production activities taking place that day.
🗣️ Tour language
The tour can be organized in:
• Italian
• English
• French
The selected language must be requested in advance and is subject to guide availability.
👐🏻 Hands-on Mozzarella & Burrata Experience
This is a truly hands-on experience.
With the support of the cheesemaker, you will take part in the stretched-curd process and make mozzarella and burrata with your own hands.
The mozzarella and burrata made during the activity will be served during the tasting.
A take-home option for the mozzarella you make can also be arranged, depending on the quantities produced and the conditions required for proper storage.
The hands-on activity may be adjusted slightly according to the daily production schedule.
🥛 Manual milking
The private morning tour includes a visit to the cow barn and milking parlor, but it does not include manual milking by guests.
Manual milking is available only during the private afternoon experience, subject to availability and operational conditions.
👟 Clothing and walking surfaces
The experience takes place inside a real working farm and dairy.
The route includes indoor and outdoor areas, with rural surfaces that may be uneven, wet, or muddy.
We recommend wearing:
• Closed-toe, comfortable shoes
• Clothing appropriate for the season
• A jacket, scarf, or umbrella when weather conditions require them
👧🏻 Children and families
Children are welcome to join the visit and, during the private tour, may also take part in the hands-on activity in a way appropriate for their age.
The Masseria is a working farm, so children must remain under the supervision of an adult at all times.
For safety reasons, children must also wear closed-toe shoes.
🐕 Animals at the Masseria
During the visit, you may encounter free-roaming dogs and cats around the Masseria.
Please let us know in advance about any fears, allergies, or special concerns related to the presence of animals.
🌦️ In case of bad weather
The experience also takes place in rainy or unfavorable weather conditions, provided that it remains safe to do so.
The outdoor portion may be shortened, while more time will be dedicated to covered areas, the hands-on activity, and explanations of the production process.
🧺 Private tasting
The private-tour tasting is more generous than the shared group-tour tasting and includes at least9 varieties of cheeses and fresh dairy products.
The tasting generally takes place in a covered area that remains open to the outdoors. Depending on the season, you may therefore feel the outdoor temperature, wind, humidity, or cool air.
The panaro is prepared using food produced by the Masseria and available on the day of the visit.
Its contents may vary according to daily production, availability, and seasonality.
⚠️ Allergies, intolerances, and dietary requirements
Please inform us of any allergies, intolerances, pregnancy, or special dietary requirements before the visit, preferably when making your reservation.
Within the limits of our production, we can adapt and rebalance the tasting by replacing certain foods with other products from the Masseria that are available on the day.
We serve only food produced by Masseria Fragnite and do not purchase outside products specifically to modify the tasting basket.
No discounts or price reductions are provided when a guest does not consume one or more foods. Whenever possible, we will instead increase the quantity of suitable alternatives.
Although we take communicated dietary needs seriously, we cannot guarantee the complete absence of cross-contact or cross-contamination.
🥗🌱 Vegetarian and vegan guests
Some of our cheeses are made with animal rennet, while many others are produced using amicrobial coagulant.
For vegetarian guests, we can select the most suitable available products.
For vegan guests, we can prepare a selection based on plant-based foods available at the Masseria, such as focaccia, bread, taralli, preserves, fruit, and vegetables.
We do not offer a dedicated vegan menu. Since the experience focuses on dairy production, the vegan tasting cannot be equivalent to the standard tasting in terms of variety or contents.
🐖 No pork
All cured meats produced and served by the Masseria are made exclusively from pork, including capocollo, pancetta, and salami.
We do not produce cured meats made from alternative types of meat.
Guests who do not eat pork will not be served cured meats, and the tasting basket will be rebalanced using other available products.
🤰 Information for pregnant guests
Some products made at the Masseria are produced using raw milk.
In particular, mozzarella, burrata, stracciatella, scamorza, and caciocavallo are made with raw milk.
Certain caciotta cheeses, pecorino, hard grating cheeses, ricotta, and some other fresh products are instead made with pasteurized milk.
Our cured meats are made from raw meat and then aged.
When informed in advance, we can exclude raw-milk products and cured meats and use suitable available alternatives.
This information does not replace medical advice. Please always follow the recommendations of the healthcare professional overseeing your pregnancy.
🌾 Celiac disease and gluten
We do not produce certified gluten-free food and do not offer a dedicated gluten-free menu.
We can exclude focaccia, bread, taralli, cookies, and other foods containing gluten, using available alternatives.
Cheeses and cured meats are produced or prepared in areas separate from baked goods, but we cannot guarantee the complete absence of cross-contamination.
🥛 Cow’s milk allergy and lactose intolerance
Mozzarella, burrata, stracciatella, scamorza, and caciocavallo are made with cow’s milk.
We also produce certain aged cheeses using a blend of cow’s, goat’s, and sheep’s milk, but we do not offer cheeses that are completely free from cow’s milk.
We do not produce a certified lactose-free product line. Some aged cheeses may naturally contain very little or no lactose as a result of maturation, but they are not certified lactose-free.
For guests with a cow’s milk protein allergy, cheeses that are naturally low in or free from lactose may still be unsuitable.
🥜 Tree nut allergy
When informed in advance, we will avoid serving desserts or foods containing almonds, walnuts, or other tree nuts.
However, baked goods may be prepared in environments where tree nuts are also used. For this reason, we cannot rule out possible cross-contamination.
Dessert is not always included and may vary according to the production available that day.
🚨 Severe allergies
Guests with severe allergies should contact us before making a reservation.
This allows us to assess honestly whether the experience and tasting can be adapted safely and to explain any limitations related to ingredients, production areas, and possible cross-contamination.
