👐🏻 Cheesemaker demonstration and practical participation
During the Group Tour, guests will attend the cheesemaker's live demonstration and will be able to observe the processing of pasta filata and the preparation of mozzarella and burrata.
The group tour is not an individual practical workshop. The possibility of producing mozzarella and burrata with your own hands is provided on private tours, depending on availability and organization of the day.
👟 Clothing and route
The experience takes place inside a real farm and a working dairy.
The route can include both indoor and outdoor spaces, with rural surfaces that could be irregular, humid or muddy.
We therefore recommend that you wear:
• closed and comfortable shoes;
• clothing suitable for the season;
• a jacket, scarf or umbrella when weather conditions require it.
🐕 Animals present in the Masseria
During the visit you may encounter free cats and dogs in the Masseria's spaces.
This is a real and lived rural context. In case of fears, allergies or special needs related to the presence of animals, we ask you to let us know in advance.
🌦️ In case of bad weather
The visit takes place even in case of rain or unfavorable weather conditions, compatible with safety and with the organization of the day.
The external part may be reduced, while more space will be given to visiting the covered areas and explaining production activities.
🧺 Space and composition of the tasting
The tasting generally takes place in an area covered but open to the outside.
Depending on the season, you could therefore sense the ambient temperature, the wind, the humidity or the coolness.
The panaro/tasting basket is prepared with the products available during the day. Its composition may change slightly depending on production, availability and seasonality.
⚠️ Allergies, Intolerances and Dietary Regimes
We ask you to let us know about any allergies, intolerances, pregnancy or special dietary regimens before your visit, preferably already at the time of booking.
Within the limits of the available production and our organizational possibilities, we can adapt and rebalance the tasting according to the communicated needs.
If you do not want or cannot consume a certain food, we can replace it with another Masseria product that is more suitable or to your liking, increasing, whenever possible, the amount of alternatives available.
We only serve food produced by Masseria Fragnite. We do not purchase external products specifically to integrate or modify the tasting basket: any replacements will therefore depend on the production and availability of the day.
There are no discounts or price reductions if a guest does not consume one or more foods. Instead, we will try to rebalance the tasting with a larger quantity of the other products available.
While paying attention to the needs communicated, we work on a real farm and food farm and we cannot guarantee the absolute absence of cross-contamination.
🥗🌱 Vegetarian and vegan guests
For vegetarian guests, it is important to know that some of our cheeses are produced with coagulant or rennet of animal, while many others are made withcoagulant of microbial origin.
To find out the most suitable products available during the visit, you can contact us in advance on WhatsApp at +39 331 293 5129.
For vegan guests we can prepare a selection based on the vegetable products available at Masseria, such as focaccia, bread, taralli, jams, fruits, vegetables and other seasonal specialties.
We do not have a dedicated vegan menu and, since this is an experience focused on dairy production, the vegan tasting cannot be equivalent in terms of variety and content to the ordinary one.
🐖 No pork/no pork
The cold cuts produced and served by the Masseria are exclusively made of pig.
We do not produce charcuterie with alternative meats. Our typical cold cuts, such as capocollo, bacon and salami, are made with raw meat and then seasoned.
If you do not consume pork, the cold cuts will be excluded from your panaro/tasting basket, which will be rebalanced according to the methods indicated above.
🤰 Information for pregnant women
Some Masseria products are made with raw milk, according to our production tradition.
In particular, filata pasta products such as mozzarella, burrata, stracciatella, scamorza and caciocavallo are produced with raw milk.
Other cheeses, including some caciotte, pecorino and grater cheeses, are instead produced with pasteurized milk. Ricotta and some other fresh cheeses are also made with pasteurized milk.
Our cold cuts are obtained from raw meat and then seasoned. During pregnancy, we therefore recommend that you evaluate its consumption with particular attention.
If you notify us in advance, we can exclude products made with raw milk and cold cuts, preparing the tasting with the available alternatives produced with pasteurized ingredients.
This information is not a substitute for medical advice. We recommend that you always follow the instructions received from the healthcare professional following your pregnancy.
🌾 Celiac Disease and Gluten
We do not produce specifically certified gluten-free foods and we do not have a dedicated gluten-free menu.
We can exclude focaccia, bread, taralli, biscuits and other gluten-containing products, using the Masseria's alternatives available throughout the day.
Cheeses and cold cuts are produced or prepared in different areas than baked goods, but we cannot guarantee the complete absence of cross contamination.
🥛 Cow's milk allergy and lactose intolerance
Our filata pasta products, including mozzarella, burrata, stracciatella, scamorza and caciocavallo, are made with cow's milk.
We also produce some aged cheeses with a mixture of cow, goat and sheep milk, but we do not have cheeses that are completely free of cow's milk.
We do not produce a certified lactose-free line. Some aged cheeses may naturally have a very low or no lactose content due to maturation, but they are not certified lactose-free products.
If you are allergic to cow's milk protein, even cheeses that are naturally lactose-free or low-lactose may not be suitable.
🥜 Allergy to dried fruit
If notified in advance, we will avoid serving sweets or products containing almonds, nuts or other dried fruit.
However, baked goods can be prepared in environments where dried fruit is used. For this reason, we cannot rule out possible cross-contamination.
Dessert is not always expected and may vary depending on the production and availability of the day.
🚨 Serious allergies
If you have serious allergies, please contact us before making your reservation.
In this way, we will be able to sincerely evaluate if the tasting can be adapted to your needs and explain to you in advance any limitations related to ingredients, production environments and possible contamination.
